Buy from a busy, trusted shop with fresh stock, especially around festivals when demand for khoya peaks. Avoid unusually cheap or oddly bright sweets, and check that milk sweets are freshly made.
Drier sweets (barfi, peda, laddu) travel well for a couple of days; many shops box-pack them. Malaiyo and very milky sweets do not travel — eat those fresh.
